Ingredients

Directions

Prepare the filling

  1. Preheat oven to 180 °C (350 °F, Gas 4).

  2. Heat butter and oil in a frying pan, add onion, cover and cook over low heat until softened but not browned. Transfer to a 1.1 L (2 pint) pie dish.

  3. Add chicken and cook until evenly browned. Arrange on top of the onion in a single layer.

  4. Stir parsley, spring onions, and milk into the pan and bring gently to a boil.

  5. Simmer for 2–3 minutes, then pour over the chicken. Cover with foil and bake for 30 minutes until the chicken is tender. Remove from oven and leave to cool.

Top and bake the pie

  1. Meanwhile, roll out pastry on a lightly floured surface until 2.5 cm (1 inch) larger all round than the pie dish. Leave pastry to relax while filling cools.

  2. Cut off a strip from all round the edge of the pastry. Place the strip on the rim of the pie dish, moisten with a little water, then place the pastry lid on top. Crimp the edges and make a small hole in the top.

  3. Preheat oven to 220 °C (425 °F, Gas 7).

  4. Beat soured cream and eggs together, then brush the top of the pie with a little of the mixture. Bake for 15–20 minutes until a light golden brown. Reduce temperature to 180 °C (350 °F, Gas 4).

  5. Pour the soured cream mixture into the pie through the hole. Shake the dish to distribute the mixture. Return the pie to the oven for 15 minutes.

Serve

  1. Remove from oven and allow to stand in a warm place for 5–10 minutes before serving, or leave to cool completely and serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken drumsticks or thighs
Provides the main meat, which becomes tender during the long gentle bake.
Puff pastry
Forms a flaky, crisp golden crust that encloses the filling.
Eggs
Set the soured cream mixture and help brown the top of the crust.
Soured cream
Adds richness and a tangy, moist texture to the filling and topping.
Milk
Combines with the pan juices to make a moist, lightly thickened sauce.
Onion
Softens into the base, adding sweetness and savoury depth to the filling.

The step that matters

Cooking the onion gently. Cooking over low heat until softened but not browned lets the onion turn sweet without bitter scorching, keeping the filling mild and smooth.
