Why it works: Rice and olive match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 4,994 recipes. Both carry trans,trans-2,4-nonadienal, which smells fatty, green. The science ↓

Directions
Prepare the rice and turkey
Prepare the rice and transfer it to a 13x9 baking pan.
Add 1/4 cup of butter to the rice and stir until it melts.
Place the rice in a warm oven.

What each ingredient does
- Turkey breast cutlets
- Provides the main protein, which browns in butter for flavour before being set over the rice.
- Butter
- Adds fat and richness, and browns the turkey and shallots for flavour.
- Heavy cream
- Adds richness and body, thickening the sauce gently when it is cooked down.
- Dry white wine
- Adds acidity and aroma, and reduces to concentrate flavour in the sauce.
- Orange liqueur
- Adds sweetness and orange aroma to the reduced wine sauce and peppers.
- Zatarain caribbean rice
- Forms the base starch that soaks up butter and the juices beneath the turkey.
The step that matters
Reducing the wine and Cointreau by 3/4. Reducing concentrates flavour and sugar while evaporating alcohol. Stopping early leaves the sauce thin and sharp, and over-reducing can make it syrupy or bitter before the cream goes in.
Swap the orange
