What each ingredient does

Chickens
Provides the main protein, which cooks through in the spiced sauce.
Onions
Fry to golden brown, adding sweetness and savoury depth to the base.
Tomatoes
Softened by frying, they add moisture and body to the sauce.
Green chilies
Add heat and fresh pungency to the base.
Garlic
Adds aroma and pungency when fried in the oil.
Vinegar
Adds acidity that brightens the sauce and balances the richness.

The step that matters

Adding the vinegar and ketchup. These acidic and sugary ingredients go in near the end, after the chicken is cooked. Added too early, the acid can toughen the meat's surface and the ketchup can scorch and darken the sauce, so a short simmer at low heat is needed.

Swap the tomato

How well each one fits the dish's main ingredients (chicken, ginger, garlic, onion, vinegar, pepper, turmeric):

  1. Capsicumfits better
  2. Mustardfits better
  3. Broccolifits better
  4. Tomatothe original

Fit is the average pairing score against chicken, ginger, garlic, onion, vinegar, pepper, turmeric. Candidates are from the same food group and used in at least 100 recipes.
