Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Potato
- Its starch helps bind the fritters and gives a tender interior.
- Egg
- Binds the grated vegetables together so the fritters hold their shape.
- Plain flour
- Absorbs moisture from the vegetables and helps the fritters hold together.
- Zucchini
- Adds moisture and a soft texture to the fritters.
- Butter
- Adds fat and flavour when the vegetables are first cooked.
- Curry powder
- Adds warm, aromatic spice flavour after gentle cooking in fat.
The step that matters
Heat the oil before frying. Hot oil sets the outside of each fritter quickly, so it crisps and absorbs less oil. In cool oil the mixture soaks up grease and turns heavy and greasy instead of crisp.
Swap the onion
How well each one fits the dish's main ingredients (potato, carrot, butter, pepper, lemon, flour, egg):
- Spinachfits better
