What each ingredient does

Nuts
Provide the bulk and rich, fatty body that makes the roast substantial and savoury.
Egg
Binds the mixture so it holds together in a sliced loaf rather than crumbling.
Wholemeal breadcrumbs
Absorb moisture and add structure, helping the roast hold its shape.
Onions
Add moisture and sweetness as they soften, building the base flavour.
Tomatoes
Add moisture and acidity, keeping the roast tender and lightly tangy.
Curry powder
Supplies the warm, aromatic spice flavour that defines the dish.

The step that matters

Binding the mixture with egg. Too little egg or overly wet vegetables can leave the loaf crumbly or soggy. The egg sets when heated, so the mixture should be firmly combined before it goes into the tin.

Swap the nuts

How well each one fits the dish's main ingredients (tomato, onion, pepper, clove, garlic, egg):

  1. Chickpeafits better
  2. Beansfits better
  3. Black-eyed peafits better
  4. Nutsthe original

Fit is the average pairing score against tomato, onion, pepper, clove, garlic, egg. Candidates are from the same food group and used in at least 100 recipes.
