What each ingredient does

Bacon
Renders fat for cooking and adds smoky, savory flavor to the base.
Leeks
Add a mild, sweet onion-like aroma that builds the soup's flavor.
Butter
Adds richness and carries flavor, and helps form the flour base.
Flour
Cooked in fat to form a roux that thickens the soup.
Potatoes
Soften during baking and release starch that gives body when pureed.
Heavy cream
Adds richness and a smooth, silky mouthfeel.

The step that matters

Cooking the flour in the fat. Flour must cook in the bacon fat and butter long enough to lose its raw, pasty taste and to thicken evenly. Adding liquid too soon can leave lumps and a floury flavor.

Swap the white pepper

How well each one fits the dish's main ingredients (leek, butter, flour, chicken, potato, cream, nutmeg):
