Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that holds the cake's crumb together.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Baking soda
Reacts with the acidic buttermilk and bananas to help the cake rise and brown.
Mashed ripe bananas
Add moisture, sweetness, and banana flavor to the crumb.
Eggs
Add structure and richness, helping bind the batter as it sets.
Buttermilk
Adds acidity that tenderises the crumb and activates the baking soda.

The step that matters

Beat on medium speed for 2 minutes, then add the eggs and beat for 1 minute. Beating after the flour is added develops gluten, which gives structure. Overbeating makes the cake tough and dense, so beat only for the stated times.

Swap the banana

How well each one fits the dish's main ingredients (flour, sugar, buttermilk, egg, vanilla, cream cheese):

  1. Blueberryfits better
  2. Bananathe original
  3. Raisinfits about as well
  4. Strawberryfits about as well

Fit is the average pairing score against flour, sugar, buttermilk, egg, vanilla, cream cheese. Candidates are from the same food group and used in at least 100 recipes.
