Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries or blackberries
Provide the main fruit flavour and colour, and body once pureed and strained.
Instant tapioca
Thickens the soup as it heats, giving it a smooth, body-rich texture.
Buttermilk
Adds tangy acidity and creaminess to the soup.
Sugar
Sweetens the soup and balances the acidity of the fruit and lemon.
Orange juice
Adds sweet citrus liquid that thins the fruit purée and adds aroma.

The step that matters

Let it thicken a little over heat. Instant tapioca needs heat to swell and thicken the liquid. If the soup is not heated enough, it stays thin, and if it boils too hard or too long, the starch can break down and the texture turns slack.

Swap the orange

How well each one fits the dish's main ingredients (cinnamon, sugar, lemon, buttermilk):

  1. Orangethe original
  2. Vanillafits about as well
  3. Raisinfits about as well
  4. Limefits less well

Fit is the average pairing score against cinnamon, sugar, lemon, buttermilk. Candidates are from the same food group and used in at least 100 recipes.
