Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Slowly softened onions give the soup its sweetness and main body.
Margarine
Fat that carries the onions' cooking and helps them brown gently.
Flour
Thickens the soup so it has body rather than being watery.
Mozzarella cheese
Melts over the top to form a stretchy, browned crust.

The step that matters

Saute the onions until clear. Onions cooked too quickly can scorch before they soften, leaving bitter flavor. Cooking them gently until translucent builds the soup's sweetness and depth.
