Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef short ribs
- The main meat, which becomes tender through long, moist cooking.
- Flour
- Coats the meat for browning and thickens the drippings into a gravy.
- Onions
- Soften and turn sweet when sauteed, adding flavor to the braising liquid.
- Brown sugar
- Adds sweetness that balances the vinegar and soy sauce and deepens browning.
- Vinegar
- Adds acidity that brightens the sauce and helps balance the rich meat.
- Soy sauce
- Adds savory depth and salt to the braising liquid.
The step that matters
Brown the ribs on all sides. Browning creates flavorful Maillard compounds on the flour-coated surface. Pale meat will taste flat, and the sauce will lack depth.
Swap the clove
How well each one fits the dish's main ingredients (beef, flour, pepper, onion, garlic, sugar, vinegar):
- Cuminfits better
- Turmericfits better
- Tarragonfits better
- Clovethe original
Fit is the average pairing score against beef, flour, pepper, onion, garlic, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
