Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey thighs
Main protein; slow cooking breaks down connective tissue, keeping the dark meat tender and moist.
Olive oil
Fat that conducts heat for browning the turkey and carries flavour.
Garlic
Provides aroma, which mellows and sweetens during long, gentle cooking.
Dry white wine
Adds acidity and savoury flavour to the cooking liquid.
Chicken broth
Supplies moisture and the liquid that gently braises the turkey.

The step that matters

Brown the turkey well before slow cooking. Browning builds savoury, deeply coloured flavour through the Maillard reaction, which moist slow cooking does not produce on its own. Pale meat will taste flatter in the finished dish.

Swap the clove
