What each ingredient does

Hamburger
Forms the meatballs and provides the savoury, meaty base of the dish.
Egg
Binds the meat mixture so the meatballs hold their shape.
Breadcrumbs
Absorb moisture from the meat and help keep the meatballs tender.
Potatoes
Add starch and moisture to the meatball mixture, giving a softer texture.
Flour
Thickens the milk and butter into a smooth, creamy sauce.
Milk
Forms the liquid base of the sauce, carrying richness and body.

The step that matters

Melting the butter, adding flour and milk for the sauce. Flour must be cooked and whisked into the melted butter before the milk goes in, then stirred until smooth. Adding it all at once can leave lumps, and the flour needs to dissolve fully to thicken the sauce properly.

Swap the onion

How well each one fits the dish's main ingredients (egg, carrot, potato, pepper, butter, flour, milk):

  1. Capsicumfits better
  2. Leekfits better
  3. Asparagusfits better
