What each ingredient does

White fish filets
Provides the main protein, which firms and turns opaque as it cooks.
Tomatoes
Add moisture and acidity that build the liquid base of the stew.
White onions
Soften during cooking and add sweetness and depth to the sauce.
Bell peppers
Soften in the sauce and add sweetness and fresh vegetable flavor.
Coconut milk
Adds fat and richness, mellowing the acidity of the tomatoes and lemon.
Garlic
Contributes pungent aroma that mellows as it simmers in the sauce.

The step that matters

Cooking the fish on each side. Fish is delicate and cooks quickly, so overcooking makes it dry and flaky apart. Turning it once over medium heat gives a light sear while the center stays moist.

Swap the clove

  1. Thymefits better
  2. Parsleyfits better
  3. Corianderfits better
