Stuffed Squash with Shrimp

Time45 to 50 minutes

Ingredients

Directions

Prepare the squash

  1. Preheat oven to 350°F.

  2. Cut a large hole on the top of the squash.

  3. Remove seeds and fiber, cleaning thoroughly inside.

  4. Place cut side down in a ceramic casserole pan with a small amount of water at the bottom.

  5. Bake for about 45 to 50 minutes, or until squash is tender and can be pierced with a fork.

Make the shrimp filling

  1. Meanwhile, dissolve the cornstarch in a cup half-filled with tomato puree.

  2. Heat the margarine in a large saucepan, combine the grated onion and beef bouillon.

  3. Fry the onion and add the tomato puree, the previously dissolved cornstarch, and thawed shrimp. Bring the mixture to boil and cook for 7 minutes.

  4. Add salt to taste.

  5. Take the saucepan out of the heat, stir in the table cream, and set aside.

Assemble and serve

  1. Carefully remove the baked squash from the oven, turn the squash hole up, and remove any excess water remaining in the casserole.

  2. Fill the hole with half of the cream cheese, add the shrimp, and top with the remaining cheese.

What each ingredient does

Squash
Forms the edible vessel that holds the filling and becomes tender when baked.
Cornstarch
Thickens the tomato sauce as it heats, giving it body so it clings to the shrimp.
Tomato puree
Provides the base of the sauce, adding acidity, body and colour.
Cream cheese
Melts into the filling and adds richness and a creamy texture.
Table cream
Stirred in off the heat to add richness and smooth the sauce.
Shrimp
Supplies the main protein, firming slightly as it heats through in the sauce.

The step that matters

Dissolve the cornstarch fully before adding it to the puree. Cornstarch clumps if added dry or undissolved to hot liquid. Mixing it into cool liquid first lets the starch disperse so it thickens the sauce evenly once heated.

Swap the parsley

How well each one fits the dish's main ingredients (onion, tomato, beef, shrimp, cream, cream cheese):
