Garbanzo Soup

Time1 to 1 ½ hours

Ingredients

Directions

Make the stock

  1. Bring the water to a boil, then add all the stock ingredients, including the chicken.

  2. Skim the foam from the top as the soup simmers for 1 to 1 ½ hours.

  3. Remove the chicken, debone it, and shred the meat when cool.

  4. Strain the stock and chill. This hardens the fat for easy removal.

  5. Remove fat from stock.

Finish the soup

  1. Reheat stock and add the juice of two limes.

  2. Add all the vegetables except the beans and cook just until tender‑crisp, about 20 minutes.

  3. Add the shredded chicken and garbanzo beans.

  4. Heat until chicken and beans are hot throughout.

What each ingredient does

Frying chicken
Simmered in the stock to flavor the broth and supply tender shredded meat.
Garbanzo beans
Add body and a firm, starchy texture to the finished soup.
Chicken bouillon cubes
Add savory, salty depth to the stock.
Lime juice
Adds bright acidity that lifts the flavor of the broth.
Zucchini
Adds tender-crisp texture and mild, fresh vegetable flavor.

The step that matters

Cook the vegetables just until tender-crisp. Vegetables keep cooking in the hot broth after heat is reduced. Cooking them only until tender-crisp keeps their texture and color, while overcooking makes them soft and dull.

Swap the clove

How well each one fits the dish's main ingredients (garlic, oregano, cumin, pepper, basil, chicken, lime):

  1. Corianderfits better
  2. Thymefits better
  3. Marjoramfits better

Fit is the average pairing score against garlic, oregano, cumin, pepper, basil, chicken, lime. Candidates are from the same food group and used in at least 100 recipes.
