What each ingredient does

Cauliflower
Forms the main body of the soup and, once pureed, gives it a thick, creamy texture.
Chicken broth
Provides the liquid that softens the cauliflower and forms the base of the soup.
Cheddar cheese
Melts into the soup to add richness, saltiness and a creamy body.
Light cream
Adds fat and smoothness, softening the soup's texture and rounding its flavor.
Bacon
Adds savory, smoky flavor and a salty contrast to the smooth soup.

The step that matters

Puree only half the mixture. Blending half the soup while leaving the rest in pieces makes it creamy yet still textured. Blending it all would make the soup uniformly smooth, and the cheese and cream added afterward might not blend evenly.

Swap the cauliflower

How well each one fits the dish's main ingredients (onion, pepper, chicken, chive, cheddar cheese, cream, butter):
