Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the bulk of the casserole and absorbs moisture from the vegetables and custard.
Eggs
Whipped whites lighten the topping, while yolks help it set into a custard.
Gouda cheese
Melts into the egg mixture, adding richness and savory flavor.
Broccoli
Adds bulk, texture, and a mild vegetable flavor throughout the casserole.
Mushrooms
Release moisture as they cook, adding earthy savory depth.
Milk
Loosens the egg yolks into a pourable mixture that bakes into a tender custard.

The step that matters

Folding in the beaten egg whites. Whites beaten until stiff but not dry trap air that gives the topping lift. Overbeaten whites turn grainy and fold poorly, while deflating them by stirring hard loses the rise.

Swap the clove

How well each one fits the dish's main ingredients (rice, broccoli, mushroom, onion, garlic, butter, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Turmericfits better
  4. Clovethe original

Fit is the average pairing score against rice, broccoli, mushroom, onion, garlic, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
