Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does
- Eggs
- Bind the chocolate rice custard and help it set into a sliceable filling as it bakes.
- Cooked rice
- Forms the bulk of the creamy filling, giving it body and a soft, pudding-like texture.
- Milk
- Cooks with the rice into a thick, creamy base and adds moisture to the filling.
- Graham cracker crumbs
- Mixed with melted butter to form the crust that holds the pie together.
- Fresh or frozen cranberries
- Add tart acidity that balances the sweetness of the chocolate and sugar.
- Chocolate syrup
- Adds chocolate flavor and sweetness to the custard.
The step that matters
Cook the rice mixture until thick and creamy. The rice must thicken fully on the stovetop before the eggs are added. Undercooked starch stays thin, and the pie may not set well after baking. Stirring often prevents scorching on the bottom of the pan.
