Ingredients

Directions

Prepare

  1. Preheat oven to 350 degrees.

  2. Spray a large Lasagna-type casserole dish with non-stick spray.

  3. Coat the bottom of the casserole with 1/3 of the enchilada sauce and set aside.

  4. Heat a non-stick skillet.

Make the filling

  1. Add cubed chicken and cook 3 to 5 minutes over medium-high heat until lightly browned.

  2. Add chopped onion, oregano, and black pepper, and continue cooking 3 to 5 minutes until the chicken is no longer pink and the onion is translucent.

  3. Remove from heat and cool in the skillet for 5 minutes.

  4. Stir in canned mild green chiles, sour cream, and Monterey Jack cheese.

  5. Evenly divide the chicken mixture down the center of each flour tortilla, roll up, and place seam side down into the prepared pan atop the enchilada sauce.

  6. Spoon the remaining 2/3 cup enchilada sauce evenly over the rolled tortillas.

  7. Cover the baking dish tightly with aluminum foil.

  8. Bake at 350 degrees for 30 minutes or until thoroughly heated.

Top and serve

  1. While this is in the oven, toss together in a large bowl the shredded lettuce, chopped fresh tomatoes, cubed avocado, sliced olives, and cilantro.

  2. Remove from oven and remove the aluminum foil.

  3. Top with sharp cheddar cheese and return to the oven, uncovered, for about 4 or 5 minutes.

  4. Remove from the oven one more time and top the entire casserole with the lettuce mixture, spreading it evenly over the surface.

  5. Return the casserole to the oven for 2 to 3 minutes more to wilt the lettuce and lightly warm the tomatoes, avocados, and olives.

  6. Serve with Mexican-style rice and lots of crunchy tortilla chips.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breasts
Provide the main protein, which cooks through and browns lightly in the skillet before rolling.
Monterey jack cheese
Melts into the filling to bind it and add creamy richness.
Sour cream
Adds moisture and tang, keeping the rolled filling creamy rather than dry.
Flour tortillas
Wrap the filling and soften in the sauce as the casserole bakes.
Enchilada sauce
Provides moisture and savory flavor that soaks into the tortillas as they bake.
Sharp cheddar cheese
Melts over the top to brown slightly and add sharp flavor.

The step that matters

Cook the chicken until no longer pink. Chicken must reach a safe internal temperature throughout before it is rolled and baked. Cutting into the pieces to check for pink helps confirm they are fully cooked before assembly.

Swap the oregano

How well each one fits the dish's main ingredients (chicken, onion, pepper, cheese, cream, sauce, flour):
