What each ingredient does

Black beans
Form the bulk of the dish and turn creamy as their starches soften during long simmering.
Olive oil
Adds fat for richness and carries the aromatic flavors through the beans.
Garlic
Contributes pungent aroma that mellows and sweetens during simmering.
Onion
Adds savory sweetness and depth as it softens in the pot.
White vinegar
Adds acidity that brightens and balances the earthy, rich flavor of the beans.

The step that matters

Add the vinegar after removing the pot from the heat. Acid slows the softening of bean skins, so adding vinegar while the beans are still cooking can leave them firm. Adding it after cooking keeps them tender while still brightening the flavor.

Swap the beans

How well each one fits the dish's main ingredients (onion, garlic, pepper, olive, vinegar, lime):

  1. Chickpeafits better
  2. Black-eyed peafits better
  3. Sesamefits better
  4. Beansthe original

Fit is the average pairing score against onion, garlic, pepper, olive, vinegar, lime. Candidates are from the same food group and used in at least 100 recipes.
