Ingredients

Directions

Prepare the filling

  1. Heat beans.

  2. Heat oil in a pan large enough to fry tortilla.

  3. Fry crisp using a basket mold to make a tortilla bowl.

  4. Place turkey in pan and simmer with one cup water or chicken broth until liquid is almost gone.

  5. Add 1/2 cup of your favorite salsa; simmer a few minutes.

Make the guacamole

  1. Mash avocado, keeping it lumpy.

  2. Stir in remaining ingredients.

  3. Garlic salt to taste.

Assemble and serve

  1. Spoon a dab of hot beans onto a plate and set a tortilla bowl on it (beans help keep it on the plate).

  2. Spoon 1/2 cup beans into the bottom of the shell.

  3. Sprinkle 1/4 cup cheese and spoon 1/6 turkey mixture, shredded lettuce, tomato, onion, cilantro, more cheese, sliced olives, dab of sour cream, and a generous helping of guacamole onto the shell.

  4. Serve salsa or hot sauce on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour tortillas
Fry crisp to form the edible bowl that holds the filling.
Refried beans
Add moisture and body to the base and help anchor the shell to the plate.
Turkey leftovers
Provide the main protein, simmered in salsa until moist and flavorful.
Avocados
Provide creamy richness and fat that give the guacamole its smooth texture.
Jack, cheddar or pepper jack cheese
Melts and adds fat, saltiness and savory flavor to the filling.
Lime juice
Adds acidity that brightens the guacamole and slows browning of the avocado.

The step that matters

Frying the tortilla bowl. Oil must be hot enough that the tortilla crisps quickly; if it is too cool the shell absorbs oil and turns greasy and soft instead of rigid.
