What each ingredient does

Egg whites
Bind the filling and help it set into a firm pie when baked.
Firm tofu
Forms the body of the pie, giving it a soft, custard-like, sliceable texture.
Breadcrumbs
Absorb excess moisture from the tofu and mushrooms so the pie holds its shape.
Onion
Sautéed until golden, it adds sweetness and savory depth to the filling.
Crushed tomatoes
Provide the acidic, bright body of the sauce served over the pie.

The step that matters

Baking until the center is set. Egg whites set as they heat, so underbaking leaves the pie loose and wet, while overbaking can make it dry and rubbery. Checking that a knife comes out clean shows the center has firmed.
