What each ingredient does

Tofu
Provides the protein-rich, crumbly filling that holds its body inside the rolled tortillas.
Cheddar cheese
Melts into the filling and topping, adding richness and binding the layers together.
Mozzarella cheese
Melts into a stretchy layer on top, adding fat, moisture and golden browning.
Whole tomatoes
Form the base of the sauce, adding moisture and acidity that flavours the enchiladas.
Whole wheat tortillas
Act as the wrapper that holds the filling and sauce together while baking.
Chili powder
Adds warm, earthy flavour to the sauce that carries through the whole dish.

The step that matters

Roll the tortillas tightly. Loose rolls let filling fall out and sauce soak unevenly into the tortillas. Tight rolls, placed seam side down, keep the filling inside and hold the shape while baking.
