Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the gluten network that gives the dough its structure and chew.
Egg yolks
Add fat and emulsifiers that enrich the dough and help it brown.
Butter
Adds fat that tenderizes the dough and keeps it pliable.
Sugar
Adds sweetness and helps the surface brown when fried.
Farmer's cheese
Forms the soft, mild filling that stays creamy inside the fried dough.

The step that matters

Deep fry in very hot oil. Hot oil sets the dough quickly into a crisp shell before the cheese softens and leaks out. If the oil is too cool, the pastry absorbs grease and turns heavy and oily.
