Avocado Egg Roll with Spicy Duck Sauce

Timeabout 3 minutes

Ingredients

Directions

Make the filling

  1. Sauté onion in oil until soft, about 5 minutes.

  2. Stir in garlic; cook for 1 minute.

  3. Remove from heat; stir in lime juice, tomato, cilantro, cumin and salt; fold in avocado. Cool to room temperature.

Assemble and chill

  1. For each roll, lay an egg roll wrapper on a work surface with corner at top. Put 1/2 cup cooled filling in a line from left to right on the center of the wrapper, leaving a 1‑inch border on each side. Pull top corner over filling; fold in sides. Roll once toward bottom corner. Moisten remaining corner with water; press firm to roll. Reserve on a lightly floured sheet pan, sealed side down. Cover and refrigerate until service.

  2. Egg rolls may be prepared to this point a few hours before service.

Fry and serve

  1. Deep fry 2 egg rolls at 375°F until golden brown, about 3 minutes. Cut on the diagonal. Serve immediately with 3 tablespoons sauce.

Make the duck sauce

  1. Stir together 3‑1/2 cups Chinese Duck Sauce, 1 heaping cup (7 ounces) roasted cashews, 1/3 cup chopped cilantro, 1‑1/2 teaspoons crushed red pepper and 1 teaspoon salt. Let stand at least 3 hours to marry flavors. Yield: 6 cups.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red onion
Softens into a sweet, aromatic base for the filling.
Avocado
Provides the creamy body and rich fat that make up most of the filling.
Lime juice
Adds acidity that brightens the filling and slows avocado browning.
Dried tomato
Adds concentrated savory sweetness and a chewy texture to the filling.
Egg roll wrappers
Form the crisp, blistered shell that holds the filling during frying.

The step that matters

Cool the filling before rolling. Warm filling softens the wrappers and makes them tear or leak, and it turns the avocado soft and loose. Cooling to room temperature keeps the wrappers intact and the rolls firm enough to fry evenly.

Swap the onion

How well each one fits the dish's main ingredients (garlic, lime, tomato, cumin, avocado, egg, sauce):

  1. Spinachfits better
  2. Capsicumfits better
  3. Welsh onionfits better
  4. Onionthe original

Fit is the average pairing score against garlic, lime, tomato, cumin, avocado, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
