What each ingredient does

Flounder fillets
Provides the firm, flaky fish that forms the base of each serving.
Cream cheese
Adds richness and a creamy body to the soup when beaten with milk and stirred in.
Tomatoes
Contribute acidity, body and savory flavor as they cook down into the soup.
Potatoes (in the method)
Release starch as they cook, thickening the soup and giving it body.
Milk
Adds creaminess and softens the flavor of the spiced tomato broth.
Shrimp
Adds sweet, tender seafood flavor and texture to the soup.

The step that matters

Adding the cream-cheese mixture to the soup. Cream cheese can curdle or turn grainy if it is added to a boiling liquid. Beating it smooth with milk first and stirring it in gently helps keep the soup silky.
