Homemade Nougat

Ingredients

Directions

Make the candy

  1. Pour the Karo into a saucepan, add the sugar, salt and water, and boil until 238°F (115 °C).

  2. Test a small amount in cold water; when it forms a hard ball, remove from heat.

Mix and set

  1. Beat the egg whites stiff and pour the candy mixture into them, beating constantly until the mixture is almost as thick as whipped cream.

  2. Stir in the vanilla, cherries, and nuts.

  3. Pour the mixture into a pan oiled well with Mazola. The Nougat should be about half an inch thick.

  4. Let stand overnight.

Cut and wrap

  1. Cut into oblong pieces and wrap in wax paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Karo syrup
Keeps the sugar from recrystallizing, giving the nougat a smooth, chewy texture.
Granulated sugar
Provides sweetness and, once boiled, forms the firm candy base that sets the nougat.
Egg whites
Whipped to a foam, they trap air that gives the nougat its light, airy structure.
Almonds
Add crunch and nutty flavor that contrasts with the chewy candy.

The step that matters

Boil the candy to 238°F (115 °C). Temperature controls how much water remains in the sugar syrup. Undercooking leaves the nougat soft and sticky, while overcooking makes it hard and brittle once set.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
