Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg beaters
Egg proteins thicken the milk as they heat, giving the nog its body.
Skim milk
Forms the liquid base and is used to thin the finished nog to the desired consistency.
Granulated sugar
Adds sweetness and helps balance the flavour of the eggs and dairy.
Brandy
Adds aroma and warming flavour; stirred in just before serving.

The step that matters

Heating the milk, egg beaters and sugar. Heat must be moderate and stirring constant, because the egg proteins can scramble or curdle if they overheat. Stopping once the mixture thickens keeps it smooth.
