Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All purpose flour
Provides the structure that holds the cake together as it sets.
Yogurt (in the method)
Adds moisture and tenderness, and its acidity helps the batter rise.
Baking soda
Reacts with the yogurt's acidity to produce gas that lifts the cake.
Sugar
Sweetens the cake and helps it brown and keep moisture.
Apple
Adds moisture and fruity sweetness throughout the crumb.

The step that matters

Bake until a knife comes out clean. Ovens vary, and the cake keeps setting as it cools. Pulling it too early can leave a wet, sunken center, while overbaking dries it out.

Swap the mace

How well each one fits the dish's main ingredients (flour, sugar, cinnamon, orange, milk, apple):

  1. Cardamomfits better
  2. Nutmegfits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against flour, sugar, cinnamon, orange, milk, apple. Candidates are from the same food group and used in at least 100 recipes.
