Party Sushi Rolls

Time25 minutes

Ingredients

Directions

Cook the rice

  1. Cook rice in water for about 25 minutes or until all liquid is absorbed.

  2. Spread rice evenly over the bottom of a large glass or wooden bowl.

Season the rice

  1. Mix vinegar, sugar and salt together in a small bowl.

  2. Sprinkle vinegar mixture generously over the rice.

  3. Adjust vinegar mixture as needed; rice should remain somewhat dry.

  4. Mix rice with a slicing motion using a large wooden spoon.

  5. Leave rice in the bowl covered with a damp cloth.

Roll and slice

  1. Place one sheet of nori seaweed on the bamboo mat.

  2. Spread approximately ¾ cup rice onto the nori; flatten with the back of a spoon.

  3. Leave a 3/8 inch (1 cm) gap at the front of the sheet and a ¾ inch (2 cm) gap at the end.

  4. Place all filling ingredients at the center of the rice.

  5. Lift one end of the mat and begin to roll, compressing the seaweed.

  6. Moisten the end of the seaweed with a small amount of water to seal the roll.

  7. Cut the roll into rounds approximately ½ inch thick.

What each ingredient does

Short-grain rice
Its starch absorbs water and turns sticky when cooked, holding the roll together.
Rice vinegar
Adds acidity and tang that balances the sweetness and seasons the rice.
Sugar
Adds sweetness that rounds out the vinegar's sharpness in the seasoned rice.
Nori seaweed (in the method)
Forms the wrapper that holds the rice and filling together in the roll.

The step that matters

Season the rice while it is still warm, then keep it somewhat dry. Warm rice absorbs the vinegar mixture evenly, while too much liquid makes it soggy and hard to roll. Covering it with a damp cloth keeps it from drying out before rolling.
