Grilled Avocado and Steak Arepas with Avocado Cream

Time5 minutes on each side (steak)

Ingredients

Directions

Prepare

  1. Combine the first eight ingredients in a shallow container.

  2. Remove about 1/4 cup of the mixture and reserve.

  3. Add steak to the container, turning to coat meat on both sides, and marinate for at least 1 hour.

Make the arepas

  1. Process cornmeal in a blender until finely ground.

  2. Transfer the ground cornmeal to a large bowl and stir in cheese, 2 tablespoons melted butter, and salt.

  3. Add enough boiling water to make a very thick batter.

  4. Stir in fresh corn kernels.

  5. Brush the griddle with the remaining 1 tablespoon melted butter and heat until medium-hot.

  6. Using about 1 tablespoon batter for each arepa, drop batter onto the hot griddle and cook until golden brown, about 2 minutes on each side.

  7. Keep the cooked arepas warm.

Grill and assemble

  1. Drain steak from the reserved mixture and place on a medium-hot grill or in a grill pan.

  2. Cook steak 5 minutes on each side, or to desired doneness.

  3. Brush avocado slices and bell pepper halves with the reserved mixture and grill, turning once, until lightly browned with grill marks.

  4. Cut avocado into chunks and blend with sour cream, lime juice, and cayenne in a blender until smooth.

  5. Slice steak and place a few pieces on each arepa.

  6. Cut bell pepper into strips and arrange over steak.

  7. Top with grilled avocado slices and a dollop of avocado cream.

  8. Sprinkle with chopped red chilies.

  9. Garnish with lime wedges and corn husks filled with chopped chilies.

What each ingredient does

Flank or skirt steak
Provides the main protein, and the lime and orange juice marinade helps tenderize its surface.
Yellow cornmeal or arepa flour
Forms the thick batter that cooks into the arepa's sturdy, starchy structure.
Monterey jack cheese
Melts into the batter, adding richness and savory flavor.
California avocado
Adds creamy fat and smoothness, and grilling browns its surface.
Sour cream
Adds fat and mild tang to the blended avocado cream.
Lime juice
Adds acidity that brightens the avocado cream and the marinade.

The step that matters

Cook steak 5 minutes on each side, or to desired doneness. Flank and skirt steaks are lean, so they become firm and tough when overcooked. Checking doneness on a medium-hot grill keeps the meat juicy and tender.
