Time12–15 minutes on the grill

Ingredients

Directions

Marinate

  1. Combine vinegar, sherry, soy sauce, ginger root, garlic, and red pepper to make a marinade.

  2. Set aside 1/4 cup of the mixture.

  3. Rinse turkey and place in a shallow baking pan.

  4. Pour the remaining marinade over the turkey, cover, and refrigerate for 1 hour, turning once.

Make the salsa

  1. In a bowl, combine the reserved marinade, tomato, green onion, green pepper, and cilantro to make the salsa.

  2. Cover the salsa and chill until serving time.

Grill and serve

  1. Drain the turkey, reserving the remaining marinade.

  2. Grill the turkey on an uncovered grill over medium coals for 12–15 minutes, turning once and brushing often with the reserved marinade, until no longer pink.

  3. To heat tortillas, place them in a single layer on the grill rack for about 1 minute.

  4. Serve the turkey topped with two slices of avocado and chilled salsa, with a tortilla on the side if desired.

What each ingredient does

Turkey breast tenderloin steaks
Provides the lean protein base that cooks through on the grill and carries the marinade flavor.
Soy sauce
Adds salty, savory depth and helps the marinade flavor the meat.
Vinegar
Adds acidity that brightens the marinade and gently tenderizes the turkey.
Dry sherry
Adds a mellow, aromatic sweetness that rounds out the marinade.
Avocados
Contribute creamy fat and a smooth texture that contrasts with the salsa.
Tomatoes
Provide moisture, acidity and fresh body to the salsa.

The step that matters

Grill until no longer pink, brushing with marinade. Turkey must reach a fully cooked internal temperature for safety, and it dries out quickly over direct heat. Brushing with the reserved marinade adds moisture and flavor, but the meat should be checked rather than judged by time alone.

Swap the garlic
