What each ingredient does
- Cranberries
- Provide the tart fruit that is candied and become the finished sweet-tart garnish.
- Sugar
- Dissolves into the water to make a syrup that sweetens and preserves the berries.
The step that matters
Cooking the berries over simmering water. Gentle, covered heat for 45 minutes lets the berries soften and absorb syrup without bursting or scorching. Keeping the water at a simmer rather than a hard boil avoids sticking and uneven candying.
