What each ingredient does

Whole-grain wheat
Provides the chewy, bulky grain structure that makes up the dish.
Water
Hydrates the wheat kernels so they soften and swell during the long simmer.

The step that matters

Simmering with the lid on. Keeping the pan covered at a gentle simmer holds steam and moisture in, so the kernels absorb water evenly and soften without scorching. Too high a heat can dry the bottom and burn the grains.
