Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh mushrooms
Cooked until just tender, they add savory body and a meaty texture to the dressing.
Red wine
Adds acidity and depth of flavor to the dressing.
Dijon mustard
Adds sharpness and helps emulsify and bind the dressing.
Sugar
Balances the acidity and salt with a touch of sweetness.
Lemon juice
Adds bright acidity that lifts the other flavors.

The step that matters

Cook the mushrooms until just tender. Overcooking mushrooms drives out their moisture and leaves them rubbery, while undercooking leaves them raw-tasting and dense. Stopping once they are just tender keeps their texture and lets them absorb the dressing well.
