What each ingredient does

Chicken breasts
Provide the main protein, which browns in oil to build flavor in the skillet.
Cornstarch
Thickens the sauce as it heats, giving it a glossy, clear consistency.
Soy sauce
Adds salty, savory depth to the sauce.
Sliced almonds
Add toasted crunch that contrasts with the soft rice and sauce.
Pineapple
Adds sweetness and a touch of acidity to balance the savory sauce.

The step that matters

Thicken the sauce until clear. Cornstarch needs to reach a simmer and be stirred while heating to swell and thicken fully. Stopping early leaves the sauce thin and cloudy, so it should be stirred steadily until glossy and clear.

Swap the pineapple
