What each ingredient does

Chicken breasts
Provide the main protein, browned first for flavor and then cooked through in the rice.
Rice
Absorbs the broth as it simmers, becoming the tender base of the dish.
Chicken broth
Supplies the liquid that cooks the rice and carries the seasonings through the dish.
Onion
Softens and adds savory sweetness to the base as it cooks.
Tomato
Adds moisture and mild acidity that brightens the rice and blends with the broth.
Green and red peppers
Soften during cooking and add sweetness and color to the rice.

The step that matters

Brown the chicken on all sides. Browning creates flavor through the Maillard reaction. Crowding the pan or stopping early steams the chicken, leaving it pale and less savory.
