What each ingredient does

Brown rice
Forms the base of the dish and absorbs the broth as it bakes, setting into a tender grain.
Butter
Adds richness and helps the onion and mushrooms brown and develop savory flavor.
Onion
Softens as it cooks, adding sweetness and aromatic depth to the broth.
Chicken or beef broth
Supplies the liquid that cooks the rice and carries the seasoning through the dish.
Mushrooms
Release moisture and add savory, earthy flavor and a tender texture.
White rice
Cooks alongside the brown rice, adding a softer texture and absorbing liquid.

The step that matters

Covering the dish for the first bake. Keeping the lid on traps steam so the brown rice absorbs the hot broth and cooks evenly; lifting it early lets steam escape and leaves the grains firm.
