What each ingredient does

Round steak
Becomes tender through long, gentle simmering, giving the stew its main body.
Flour
Thickens the cooking liquid and helps the spice coating cling to the meat and vegetables.
Yogurt
Adds tang and creaminess, and is stirred in at the end so it stays smooth.
Raisins
Plump in the simmering broth and add pockets of sweetness that balance the spices.
Onion
Softens and sweetens as it cooks, forming a flavour base for the stew.
Curry powder
Provides the warm, aromatic spice blend that defines the dish's flavour.

The step that matters

Stirring yogurt in just before serving. Yogurt is prone to curdling and separating when exposed to prolonged high heat. Adding it off the heat, just before serving, keeps it smooth and creamy.
