What each ingredient does

Beef round steak
Is the main protein; thin slicing and simmering make it tender enough to eat.
Flour
Coats the strips, helping them brown and thickening the pan liquid into a sauce.
Onion
Softens while cooking and adds savory sweetness to the sauce.
Beef broth
Forms the liquid base of the sauce and keeps the meat moist during simmering.
Mushrooms
Add earthy savory flavor and moisture to the sauce.
Rice
Soaks up the sauce and gives a neutral base for the beef.

The step that matters

Brown the meat on all sides over high heat. Browning, a Maillard reaction, builds deep savory flavor and color. Crowding the pan or stirring too early makes the meat steam and turn grey, so brown in batches if needed.

Swap the onion

How well each one fits the dish's main ingredients (beef, flour, pepper, red wine, mushroom, rice):

  1. Tomatofits better
  2. Shallotfits better
  3. Capsicumfits better
