Beef Teriyaki

Ingredients

Directions

Marinate the beef

  1. Partially freeze the beef. Cut into thin strips about 1/8-inch thick.

  2. Combine garlic powder, ginger, mustard, pineapple syrup, soy sauce and pepper sauce.

  3. Pour the mixture over the beef strips.

  4. Cover and refrigerate several hours or overnight.

  5. Drain the marinade from the beef.

Make the sauce and cook the beef

  1. Dissolve cornstarch in 1/4 cup of the marinade.

  2. Bring the remaining marinade to a boil in a small saucepan.

  3. Stir in the cornstarch mixture.

  4. Cook, stirring, 2 to 3 minutes or until thickened; keep warm.

  5. Stir-fry half of the beef in a small amount of oil in a wok or large skillet over high heat until lightly browned, about 1 minute.

  6. Do not overcook the beef, or it will be tough.

  7. Repeat the stir-fry with the remaining beef.

  8. Combine the cooked beef with the sauce.

Make the fried rice and serve

  1. Cook the onion and green pepper in oil until soft but not brown.

  2. Add garlic powder and the rice.

  3. Heat thoroughly.

  4. Add the beaten egg and soy sauce.

  5. Cook, stirring, 2 to 3 minutes or until the egg is firm.

  6. Serve the beef over beds of fried rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef round steak
Provides the meat that becomes tender strips when cut thin and marinated.
Pineapple syrup
Adds sweetness and acidity to the marinade and sauce.
Soy sauce
Adds salty, savoury depth and colour to the marinade and sauce.
Cornstarch
Thickens the marinade into a glossy sauce when heated.
Egg
Sets into firm strands that bind the fried rice together.
Cold cooked rice
Forms the base of the fried rice, separating into grains when stir-fried.

The step that matters

Stir-fry the beef briefly over high heat. Beef cooked quickly over high heat browns on the outside while staying tender inside. Overcooking tightens the muscle fibres and makes the strips tough.
