What each ingredient does

Eggs
Yolks add richness and binding, while whipped whites lighten the batter for a tender texture.
Soy flour
Adds protein and a nutty flavour, contributing structure to the batter.
Baking powder
Releases gas when heated, helping the pancakes rise and become airy.
Baking soda
Reacts with acidic ingredients such as yogurt and orange juice to produce gas for lift and browning.
Plain yogurt
Adds moisture and tang, and its acidity activates the baking soda.
Orange juice
Provides liquid for the batter and acidity that works with the baking soda.

The step that matters

Folding in the beaten egg whites. Stiff whites hold air that gives lift. Stirring them in vigorously deflates the foam, so fold gently with a spatula until just combined, and cook promptly so the batter does not lose its rise.

Swap the orange

How well each one fits the dish's main ingredients (flour, wheat, milk, egg, yogurt, molasses, honey):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against flour, wheat, milk, egg, yogurt, molasses, honey. Candidates are from the same food group and used in at least 100 recipes.
