Light Chicken Stogranoff

Timeabout 1 hour (tomato soaking)

Ingredients

Directions

Prepare

  1. In a bowl, soak tomatoes in hot water until very soft, about 1 hour.

  2. Drain well, cut into strips and set aside.

  3. Dust chicken strips in flour.

  4. Set a large pot of water to boil.

Cook the chicken and vegetables

  1. Heat 1 tablespoon oil in a wide non-stick frying pan over medium heat.

  2. Add chicken, about half at a time, and cook, lifting and turning often, until lightly brown.

  3. Remove from pan, and set aside.

  4. Add remaining 1 1/2 teaspoons oil to frying pan.

  5. Add onion and cook 5 minutes.

  6. If onions start to stick, add a little water to the pan.

  7. Add the mushrooms, garlic, thyme and cayenne pepper.

  8. Cook until the mushrooms have softened.

Make the sauce

  1. Meanwhile, stir the dissolved cornstarch into the yogurt, set aside.

  2. Add the wine and sherry to the mushrooms and cook until the liquid has almost evaporated.

  3. Stir in the broth.

  4. Turn the heat to medium-low and take the pan off the heat.

  5. Stir some of the hot vegetables into the yogurt, then stir the yogurt into the pan.

  6. Add the dried tomatoes, salt and lots of pepper.

  7. Place on the heat and stir several minutes until the sauce is lightly thickened.

  8. Stir in the chicken and heat through.

Serve

  1. Place noodles in the boiling water and cook according to package directions, then drain.

  2. Spoon the stroganoff on top and garnish with a little chopped parsley if desired.

What each ingredient does

Chicken breasts
Provides the main protein; flour dusting helps it brown and lightly coats the sauce.
Lowfat yogurt
Makes the sauce creamy and adds a mild tang.
Cornstarch
Thickens the sauce so it clings to the noodles and chicken.
Sun-dried tomatoes
Add concentrated, chewy tomato flavor and a deeper savory note.
Dry white wine
Adds acidity and aroma as it reduces into the sauce.
Onion
Becomes sweet and mellow as it cooks, forming the base flavor.

The step that matters

Stirring the yogurt into the sauce. Yogurt can curdle and turn grainy when it meets high heat. Cornstarch helps stabilize it, and taking the pan off the heat and adding some hot liquid first to warm the yogurt gently keeps the sauce smooth.
