Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and a tender crumb.
Eggs
Bind the batter and add structure and moisture as they set in the oven.
Flour
Forms the structure of the muffin as the batter sets during baking.
Baking powder
Releases gas during baking so the muffins rise and become light.
Sugar
Sweetens the muffins and helps them brown and stay moist.
Milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Fold the sifted mixture in, alternating with the milk. Overmixing after the flour is added develops gluten, which can make the muffins tough and dense. Fold gently and stop once the flour is just combined.
