Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cocoa
Provides the chocolate flavor and deep color of the brownie.
All-purpose flour
Gives the batter structure so the cake sets rather than staying wet.
Baking powder
Releases gas that lifts the batter and gives the cakes a light rise.
Canola oil
Adds moisture and a tender, fudgy texture.
Egg white
Binds the batter and helps set its structure as it bakes.
Granulated sugar
Sweetens the batter and helps keep it moist and tender.

The step that matters

Cool completely in the pan. Brownies are still soft and fragile when hot. Cooling lets the structure set, so clean, neat cuts are possible without crumbling.
