What each ingredient does

Zespri gold
Adds fresh, sweet-tart flavour and a juicy texture to the fruit salad.
Oranges
Their juice forms the sweet, aromatic syrup that the fruit steeps in.
Sugar
Dissolves into the orange juice to sweeten the syrup and help balance its acidity.
Papaya
Contributes soft, sweet flesh that absorbs the syrup and adds body to the salad.
Seedless black grapes
Add juicy sweetness and a bite that contrasts with the soft papaya.
Praline
Adds crunch and nutty sweetness against the smooth custard and soft fruit.

The step that matters

Simmering the orange syrup. Sugar must fully dissolve and the juice must simmer gently. Stirring prevents the sugar from scorching on the base of the pan, and a gentle simmer keeps the syrup clear and lightly thickened rather than bitter or burnt.
