What each ingredient does

White mushrooms
Hollow caps hold the filling and soften to become tender when microwaved.
Parmesan cheese
Adds savory, salty flavor and helps the filling taste rich.
Cornflake crumbs
Absorb moisture and give the filling a light, crisp-textured body.
Bread crumbs
Bind the filling and add body so it holds its shape in the caps.
Dry sherry
Adds aromatic depth and moisture to the filling.

The step that matters

Microwave the stuffed caps in medium power and turn the plate. Microwaves heat unevenly, so turning the plate every minute helps the caps cook through evenly and keeps some from overcooking while others stay underdone.
