Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot starch
Thickens the milk into a smooth sauce as it heats with stirring.
Shredded mozzarella
Adds cheese flavor and stretch, melting into the sauce off the heat.
Non-fat milk
Forms the liquid base of the sauce.

The step that matters

Adding the arrowroot slurry. Starch must be dispersed in cold water first and added slowly while stirring constantly. Added dry or in a lump, it clumps and leaves gritty spots that do not smooth out, and the sauce thickens unevenly.

Swap the white pepper

How well each one fits the dish's main ingredients (milk, garlic, arrowroot, cheese):

  1. Capersfits better
  2. Thymefits better
  3. Turmericfits better
  4. White pepperthe original
