What each ingredient does

Tomato paste
Adds concentrated tomato flavor, body, and a deeper color to the chili.
Bulgur wheat
Absorbs liquid as it cooks, thickening the chili and giving it a hearty texture.
Onion
Sweetens as it softens, forming the aromatic base of the chili.
Garlic
Adds pungent aroma that mellows and sweetens with gentle cooking.
Carrot
Adds subtle sweetness and softens into the sauce as it simmers.
Celery
Contributes savory flavor and a tender vegetable base as it cooks down.

The step that matters

Add bulgur and simmer 30 minutes. Bulgur keeps absorbing liquid as it sits, so the chili can turn thick and dry. Adding more water when needed keeps the texture loose and the grains tender.
