What each ingredient does

Chicken pieces
Provides the main protein, which firms and turns opaque as it cooks through.
Orange marmalade
Adds sweetness and a sticky glaze that helps the sauce cling to the chicken.
Catsup
Adds tomato sweetness, acidity, and body to the sauce.
Soy sauce
Adds salty, savory depth and helps the sauce brown slightly.
Butter
Adds fat and rich flavor when cooking the onion and garlic.
Chicken broth
Adds moisture and liquid so the sauce can simmer and thin the glaze.

The step that matters

Adding the sauce and returning to the oven. The sugars in marmalade and catsup can scorch on the hot pan and turn bitter, while the chicken can dry out. Keep the sauce spooned over the pieces and watch the color during the final 20 minutes of baking.
